Pitta Pappou: Engineering a High-Volume Multi-Store Food Delivery Ecosystem with Polygon Routing
Project Overview
Launched in 2016, Pitta Pappou is a well-known multi-store grill-restaurant chain operating in Greece. Food delivery businesses demand relentless operational speed; an order delayed by a few minutes directly compromises customer satisfaction.
Saikō was tasked with building a unified digital ecosystem capable of handling high-volume online food ordering across multiple physical storefronts. By utilizing advanced tailor-made software development, we ensured that each order is automatically and accurately routed to the correct local branch in real-time, completely bypassing the limitations of off-the-shelf software.
The Challenge
In 2016, mainstream SaaS food delivery aggregators were not as pervasive as they are today. Building a proprietary, scalable multi-store setup from scratch presented distinct technical challenges:
- Advanced Geospatial Routing: Standard radial (radius-based) circles are highly inaccurate for city delivery limits due to rivers, highways, or traffic flows. The system required custom, highly accurate boundaries.
- Multi-Outlet CMS Customization: Standard e-commerce structures were natively designed for single-warehouse operations. The system had to be heavily modified to handle multiple independent store entities, menus, and operating hours under one unified domain.
- Real-Time Terminal Dispatching: Orders couldn’t sit around waiting for email notifications; they needed to pop up on store kitchen terminals instantly to minimize preparation delays.
Our Solution
1. Custom Geospatial Routing via Google Maps API Polygons
To achieve absolute delivery precision, Saikō utilized the Google Maps API to implement polygon-based geofencing. Administrators could draw customized, asymmetrical geometric shapes on a map for each individual store branch.
When a customer entered their delivery address at checkout, our system used a custom mathematical script (Point-in-Polygon algorithm) to determine exactly which store’s delivery zone the address fell into, automatically filtering the available menu and dispatching the order to that specific store.
This rich dataset of precise geospatial routing provides a perfect foundation to eventually integrate advanced AI and machine learning solutions for intelligent demand forecasting, dynamic driver routing, and automated delivery time estimations based on real-time kitchen loads.
2. Heavily Overridden Joomla & VirtueMart Core
We fundamentally extended the core capabilities of the existing CMS architecture, transforming it into one of the most robust multi-vendor custom web applications and platforms in the local food tech sector.
We engineered a custom overlay that dynamically loaded separate branch profiles depending on the user’s location. This allowed distinct pricing structures, active delivery tracking per branch, and dynamic stock toggling based on individual store inventories.
3. Custom Real-Time Ordering Backend App
To eliminate latency between the website checkout and the kitchen counters, we developed a standalone, lightweight backend application.
Driven by Saikō’s expertise in intelligent automation and API integration, this application established a persistent polling connection with physical store terminals by opening optimized REST APIs on the backend. The moment an order was finalized online, it popped up on the respective store’s dashboard with sound alerts, triggering instant meal preparation.
4. Hybrid Cross-Platform Mobile Applications
To capture the growing wave of mobile-first consumers, we packaged the entire ordering flow into a fast, hybrid iOS and Android application, demonstrating our capability to deliver high-performance mobile and desktop apps.
The mobile apps communicated seamlessly with the central system via our proprietary secure REST API endpoints, allowing users to save multiple addresses, look up their nearest branch via GPS, and order on the go with zero friction.
